We can't imagine a more idyllic way to toast to autumn than with a crisp glass of bubbles, surrounded by seasonal produce and lots of caviar.

"Join us as we showcase La Grande Dame champagne with the vibrancy of the chef's garden." Each room at the Mayflower Inn & Spa is a decadent New England fantasy, with plush furnishings in soft pastel hues, four poster beds, and even suites that stretch up to 1,200 square feet with massive balconies that overlook the property. Specifically, the menu highlights Ossetra caviar with garden herb crème fraîche, potato and beet crisps, and buckwheat blinis.

What Is Cowboy Caviar? Pass the Tortilla Chips and Find Out (The Pioneer Woman)

Cowboy caviar, often called Texas Caviar, is a mix of black-eyed peas, black beans, and chopped jalapeño, bell pepper, red onion and tomato.

Cowboy caviar can be made up to 2 days in advance and refrigerated until ready to serve. It is fine to hold even longer, but the vegetables will start to lose their crunch. Eat it with chips or serve it as a side dish on a [summer cook-out](https://www.thepioneerwoman.com/food-cooking/meals-menus/g32336081/summer-recipes/) menu. When going that route, substitute about 1/3 cup of dressing in place of the olive oil, vinegar, and Worcestershire and decrease the salt and pepper slightly. We've dressed it with red wine vinegar, olive oil and added a little Worcestershire sauce for saltiness and depth. For this recipe, we use a mix of black beans and black-eyed peas for color and flavor.
